HOPPIN' JOHN
2 cans blackeyed peas (heated)
1 cup chopped ham
1 cup finely chopped onion
1/2 teas. hot pepper sauce
2 Tablespoons oil
1/2 teas. salt
3 cups rice
Saute ham, onions and hot pepper sauce in oil over moderate heat for 3-5 minutes, stirring frequently until the onions are soft but not yet browned. Combine blackeyed peas, ham mixture and rice; then heat. Garnish with chopped pimento and green onions. Serves 8.
