Nacho Casserole
1 lb lean ground beef
3 small cans no salt added tomato sauce
1 pkg taco seasoning
1 large bag of regular nacho chips
3/4 cup sour cream
3/4 cup cottage cheese (combine both sour cream and cottage cheese, until smooth)
3 cups shredded cheddar/jack cheese
Brown ground beef and drain add tomato sauce and taco seasoning let simmer for a few minutes. While sauce is simmering, coat bottom of a 9x13 baking dish with cooking spray. Cover bottom of dish with one layer of nacho chips, then cover nacho chips with 1/3 of the sauce, then 1/3 of the sour cream/cottage cheese mixture - use a spoon to swirl it together with the meat sauce, then top with 1/3 of the shredded cheese. Repeat layers until all ingredients are gone. Top off with a little more shredded cheese. Bake for 25 minutes at 350 degrees or until cheese is melted through. This is a great party dish.

Mexicana Brunch Pie
5 eggs, beaten
2 tablespoons butter, melted
1/4 cup all-purpose flour
1/2 teaspoon baking powder
1 carton of cottage cheese (8 ounces)
2 cups shredded Monterey Jack cheese
1 small can of chopped green chilies, drained
Combine first 4 ingredients in a mixing bowl, beat well. Stir in remaining ingredients and pour into well-greased 9-inch pie plate. Bake at 400 for 10 minutes, reduce heat to 350, and bake another 20 minutes or until set. Add a little more cheese on top for extra gooiness!!!
